Roma’s Pizza Pasta & Subs is a new-ish, dual-duty spot in Columbia, MD, that has a kickass authentic Italian deli and market with its name being a nice pun, as well as a proper pizzeria all in the same cozy space.
Owner and the staff are pretty chill, which can be a 50-50 roll of the dice when it comes to my work, but I definitely lucked out here since they just kept pumping out the dishes for well over an hour after the initial prep (while I covered the shelved goods). When the place got a few customers for beginning of the lunch hour, the steady rate of plates for my camera continued on and shows that they can handle being busy like any proper food spot should. I’ve been in some real horror stories when it came to “being busy” or “being short-staffed.”
How’re the pizza and noodly goodies here, especially their grandma style square pies? Fantastic! Proper cheese and tomato sauce honestly makes or breaks a pizza in my book, since dough is the sacred default that always has to be either totally on-point or paper-thin not to really get in the way. Roma’s nails their breads as a whole for both the deli side and especially the pizzeria side of things. Grandma’s pies – thin, perfect crust, with one of the best tomato sauce I’ve had and proper cheese unlike the typical takeout pizza holes in the wall or corpo chains. The taste hear definitely feels authentic and that’s pretty rare to find without a place trying to be too posh for what it doesn’t need to be. Homey atmosphere of a little market is a proper setting to enjoy some awesome pizza. The only downside are the prices for the portions you get, but at the same time no one’s stopping you from getting Dominoes for the Nth time instead of eating some proper and unique pizza.
