Gallery Cafe was a rush from shooting Miss Toya’s with all the usual and favorite bits like the DC out loop traffic and everything, but I made it right on time and even managed to find this elusive little cafe on the P1 floor of the Dulles Metro Center building.




And boy oh boy was 1pm lunch rush a bad call to schedule even a tiny photo shoot. I waited behind about 6 or so suits to finally greet chef Bismarck and calm him down regarding the pickle we were both in – customers come first, then we can hash out our business without stressing over juggling both. What it turned out to be, as USUAL, is corpo sales reps butchering the 3pm our chef wanted into a magical 1pm, just like they seem to love doing with many other restaurants and sending me places hours before they open only to stare at a dark interior, turn right back, and collect my comp. I’ve had people fired for wasting my mileage, gas and time before and it was an absolutely hilarious story you can read here.

Food here checks out and shows chef Bismarck’s care and love for his craft, as well as his kitchen team, and how slammed they get for lunch each day is the solid proof of the fact.
We chatted about corpo negligence and his appreciation of food pornography as it is an indispensable element of the foodbev industry today – the kind of words I love to hear.
